Chemical properties of d-mannose:

There are two types of D-mannose powder: α-type and β-type. Α-form is a methyl crystal with a melting point of 133°C; β-form is an ethyl crystal with a melting point of 132°C (decomposition point). Sweet taste, slightly bitter aftertaste. It is easily soluble in water (250%), hardly soluble in ethanol (0.4%), and insoluble in ether.

In plants, it mainly exists in polysaccharides such as mannan in the form of condensates. The free form is present in the exudate of the coconut husk and Fraxinusornus (Fraxinusornus). In addition, there are traces in citrus peel, germinated seeds and molasses.
